This Cabernet Sauvignon is sourced from the classic Coonawarra region of South Australia. The 2015 vintage in Coonawarra was a variable season including an extreme heat wave during march which led to an early start to harvest, resulting in fruit reaching remarkably maturities, colour and tannin levels. After harvest, the grapes were crushed, yeasted and softly bag pressed in traditional style to avoid the extraction of bitter tannins. The wine was then transferred to French Oak for 14 months maturation prior to final blending and bottling.

This Chardonnay is sourced from our Cookoothama Vineyard on the banks of the Murrumbidgee River at Darlington Point in the Riverina. The fruit was harvested in the cool of night and delivered in small batches. To preserve the delicate natural aromas and flavours, the fruit was gently crushed, chilled and pressed immediately. The free run juice then underwent slow, cool fermentation to preserve the delicate fruit flavours. Initial fermentation was in stainless steel tanks, after which the wine was transferred to new and seasoned French & American oak for 18 months to complete fermentation. Once dry, the wine remained on yeast lees for further oak maturation undergoing fortnightly batonage to increase complexity and mouth feel prior to final blending and bottling.

To retain the delicate natural aromas and flavours, the fruit was crushed, chilled and pressed immediately then underwent slow cool fermentation in stainless steel tanks
The fruit was harvested during the cool of the night. To retain delicate natural aromas and flavours, the fruit was crushed, chilled and pressed immediately. Clear juice parcels were then fermented separately. Some parcels were fermented in stainless steel tanks to preserve the fruit flavour while others were fermented and matured with oak to gain extra complexity. The separate parcels were then tasted and blended to produce the best possible Chardonnay.
The 2015 vintage was characterised by warm and dry conditions with little rainfall throughout the growing season. These conditions assisted in lower yields resulting in wines with excellent colour and fruit concentration. After picking, the grapes were crushed, yeasted and pumped over in traditional style to avoid the extraction of bitter tannins. The wine was then matured with some American and French oak treatment.
Carefully selected parcels of Moscato from the Nugan family’s premium vineyards in New South Wales where crushed then gently bag pressed, clarified and fermented with an aromatic yeast at cool temperatures to retain the delicate natural aromas and flavours. Fermentation was stopped at a point where alcohol, residual sugar and acidity were perfectly balanced, then cold stabilised to retain the wines natural lively spritz finish.
