Cabernet Merlot

Cabernet Merlot

Dry warm sunny days with cool nights produced optimum fruit flavours. After picking, the fruit was crushed and fermented in static tanks with automatic irrigators. Thereafter, the wine underwent cool fermentation to maintain a fruit driven style with some components receiving American oak during fermentation to add complexity and structure.

Semillon Chardonnay

Semillon Chardonnay

To retain the delicate natural aromas and flavours of the Semillon Chardonnay both varieties were separately crushed, chilled and pressed before undergoing slow, cool fermentation in stainless steel tanks. Prior to bottling, specific parcels were selected and blended to make this wine.

Chardonnay

 To retain the delicate natural aromas and flavours, select parcels of fruit were crushed and lightly pressed prior to clarification and cool fermentation. Regular lees stirring helped to add texture and finesse to the wine that was fermented and matured on medium toast in addition to receiving French oak treatment.

To retain the delicate natural aromas and flavours the fruit was crushed and cold macerated prior to pressing. Thereafter, the wine underwent slow, cool fermentation in stainless steel tanks prior to final blending and bottling.

An incredibly mild summer with above average rainfall is largely responsible for prolonging the harvest which ensured slow, even ripening of the fruit. To achieve optimum ripeness the fruit was harvested in the cool of the night preserving delicate fruit flavours. After picking, the fruit was crushed and fermented in static tanks with automatic irrigators. Selected parcels received American oak treatment during fermentation to add complexity and structure.

An incredibly mild summer with above average rainfall is largely responsible for prolonging the harvest which ensured slow, even ripening of the fruit. To achieve optimum ripeness the fruit was harvested in the cool of the night preserving delicate fruit flavours. After picking, the fruit was crushed and fermented in static tanks with automatic irrigators. Selected parcels received American oak treatment during fermentation to add complexity  and structure.

Brilliant red with a youthful purple hue. Lifted aromas of red berry with spice, ash & earthy overtones. A well structured medium bodied wine displaying ripe fruit, spicy tannins and black pepper nuances.

Verdelho

Verdelho

A short burst of very hot weather in February is largely responsible for accelerating the harvest. However, milder weather followed and slowed the ripening process again, producing wines that were in balance, with excellent natural acid. To retain the delicate natural aromas and flavours the fruit was crushed and cold macerated prior to pressing. Thereafter, the wine underwent slow, cool fermentation in stainless steel tanks prior to final blending and bottling.

Pinot Noir

A short burst of very hot weather around the New Year is largely responsible for accelerating the harvest. However, milder weather followed and slowed the ripening process again, producing wines that were in balance, with excellent natural acid retention. To retain the delicate natural aromas and flavours the fruit was crushed and cold macerated. Thereafter, the wine underwent slow, cool fermentation in stainless steel tanks in additional some French Oak treatment prior to final blending and bottling.
