The Wines

Wally's Hut

Wally’s Hut is the stockman's hut built in the 1860's on our Cookoothama vineyard. The hut was used by stockmen who rode the fence line of this once vast grazing property protecting its livestock. Today, the lone rider is long gone and the landscape has been transformed by vines but Wally's Hut stands as his legacy.

Verdelho

Zesty tropical aromas with citrus overtones. On the palate, fresh tropical fruit flavours with clean, zesty acids and a crisp, dry finish. Perfect partner with poultry and seafood dishes such as BBQ prawn skewers coated in lemon juice, extra virgin olive oil and salt & pepper.

Chardonnay

Aromas of poached peach, fig and pineapple with biscuity notes. Tropical, medium bodied style with peach and melon flavours complimented by zesty acids, savoury nuances and a crisp, dry finish. Perfect partner with many styles of modern cuisine including those with an Asian or Mediterranean twist.

Cabernet Merlot

Lifted aromas of sweet red berries with lashings of mint. On the palate, appealing sweet berry flavours layered with mint, spicy oak and soft lingering tannins. Perfect partner with meat and pasta dishes such as homemade spaghetti bolognaise topped with fresh Parmesan.

Cabernet Shiraz

Deep crimson with youthful purple hues. Lifted aromas of plum and blackcurrant melded with earth and spice. On the palate, appealing sweet berry flavours layered with mint, earth and spice. Perfect partner with meat and pasta dishes. Try with homemade spaghetti bolognaise topped with fresh parmesan.

Shiraz

Lifted red berry aromas melded with spice, ash and earth. Appealing medium bodied wine, displaying ripe berry fruit and black pepper notes. Lends itself perfectly to a variety of red meat and pasta dishes such as marinated BBQ fillet steak, roast lamb and beef lasagne.
